Swedish Strawberry Cake
Sponge app 20 pieces
4dl (small cups) socker
3tbs baking powder & 1tbs vanilla sugar
2dl luke warm milk
Filling: Milda vanilla whipping cream or Ekströms Marsan Custard
Fresh raspberry crashed in sugar or Torfolk's Jam
1. Whip the egg and sugar to a fluffy mix. Add flour, baking powder then mix in melted luke warm butter and milk. Pour the mix into a greased and dusted baking tin bake at 175°C/350°F/Gas mark 5 for about 30 to 40 minutes. Check that the mix is dry in the middle before taking it out. If it's browning too much, put a little tinfoil over.
2. When the cake has cooled down, divide into two or three layers. Add crushed strawberries or raspberry or banans and some vanilla custard in between the layers.
3. Decorate with whipping cream and strawberries.
