Reindeer with Porcini (Karl Johan) Mushrooms & Lingonberries
Reindeer and porcini mushrooms (or Karl-Johan mushrooms as they’re called in Sweden) are really a good combo. Here's a really quick recipe that doesn't take long to prepare and tastes really good too.
INGREDIENTS (Serves 2-3)
1 packet of thinly sliced reindeer meat, called Renskav in Swedish
2 shallot onions
20 g Karl-Johan (porcini) mushrooms (dried)
1 tbsp veal stock
3 dl cream
Salt and pepper, to taste
Soak the mushrooms in warm water for 15 minutes. Then squeeze out the water.
Fry the Renskav meat in butter with finely chopped onions and the mushrooms.
Season with salt and pepper. Add the veal stock and cream and simmer for a few minutes.
Serve with boiled or mashed potatoes and sprinkle with lingonberries.
