Elk Cheese Burger from Västerbotten

Ingredients

600g Elk Mince
1 large onion, grated
1 egg
1-2 tsp salt
1 tsp Sambal Oelek
½ tsp Dijon mustard
4 thick slices of Västerbotten Cheese
8 slices of toasted bread
4 thin slices of smoked bacon, crispy
2 brined/pickled cucumbers
2 tomatoes, sliced
1 red onion, thinly sliced.
 

Mix mince, egg, onion and spices and form 4 burgers and grill them. Put a slice of the cheese on each burger and serve with the bacon, pickle, tomatoes, Djion mustard and red onion. Roast potatoes and coleslaw goes nicely with the burger.
