Drömmar - Dreams Biscuits

Dreams (Drömmar) biscuits are gorgeous, flaky, crispy and crumbly melt in the mouth biscuits, popular at Swedish fika coffee parties and for afternoon tea. Dreams are baked with ammonium bicarbonate, which creates air bubbles and gives the biscuits their special texture.

Drömmar - Dreams Biscuits


makes approx. 30 biscuits

INGREDIENTS:

100 g softened butter
250 ml caster sugar
100 ml sunflower oil
350 ml plain flour
0,5 tsp ammonium bicarbonate 
2 tsp vanilla sugar

METHOD:

Preheat the oven to 150°C. Microwave the butter until it is at room temperature if it isn’t already (without melting it).

Beat the room-temperature butter and sugar until fluffy with an electric whisk for 1–2 minutes.

Add the oil a little at a time, whisking vigorously with the electric whisk. Note: This step is really important, to insure perfect Dreams Biscuits!

Mix the plain flour, ammonium bicarbonate and vanilla sugar in a bowl.

Add the flour mixture to the butter and sugar mixture. Mix together to form a dough.

Line two baking trays with baking paper. Roll the dough into two long strips and cut each strip into small pieces, sized so that when rolled up they are about 1,5 cm in diameter.

Using floured fingers, roll the dough into small balls, each about 1,5 cm in diameter (roughly 1 tbsp of dough). Place the balls on the baking paper, leaving a few centimetres between them.

Bake the biscuits in the middle of the oven for 15–20 minutes. They should turn pale yellow and crack slightly on top.

Take them out and leave the biscuits to cool completely on the baking trays.

Top tip!
Dreams Biscuits are usually flavoured with vanilla, but the following varieties are worth a try:
Replace 4 tbsp of flour in the recipe with cocoa powder for Chocolate Dreams.
Add desiccated coconut to the biscuit dough for Coconut Dreams.
