PYTTIPANNA
Pyttipanna is a tasty dish traditionally made with leftover food. Pyttipanna (which loosely translates as ’Small Bits In A Pan’) is a popular dish in Sweden, often topped with a fried egg and served with pickled beetroot. Pyttipanna is easy to vary, the receipt can easily be adapted to make the dish vegetarian or vegan.
INGREDIENTS:
Serves 4
6 cold boiled potatoes, cut in to 1 cm cubes
2 onions, diced
2 large carrots, diced
500 g meats in 1 cm cubes, for example beef, sausages (such as Prinskorv or Falukorv sausages)
Any extras, such as left over vegetables and/or meats, cut in to small pieces.
4 eggs
Cooking oil and butter, for frying
Salt and pepper, to taste
Pickled beetroot, to serve
METHOD:
Gently fry the onions in a little butter until golden. Set aside.
Fry the diced potatoes carrots, and any other raw vegetables for 8-10 minutes over medium heat. Set aside.
In a separate pan, fry the beef and any other raw meat quickly until browned but not well-done.
Add the vegetables and onion to the meats and cook together for about a minute.
Season with salt and a good amount of freshly ground black pepper.
Serve with fried eggs and pickled beetroot.
