Pancake Cake
Swedish Pancake Cake (Pannkakstårta) is made with a stack of thin Swedish pancakes filled with cream, berries, and jam. Kids love it at birthday parties, and it’s makes a delicious weekend family brunch.
Ingredients:
serve 8 people
Pancakes
2 1/2 dl plain flour
1/2 tsp salt
5 dl milk
2 eggs
approx. 2 tbsp butter (for frying)
Filling
5 dl whipping cream
2 tbsp caster sugar
3 dl jam
Topping
300 g fresh berries (e.g. strawberries and blueberries)
1 tsp icing sugar (optional)
How To
Pancakes: Mix the flour and salt in a bowl. Gradually whisk in the milk, a little at a time, until you have a smooth batter. Whisk in the eggs one at a time.
Heat a frying pan with a little butter. Pour in a thin layer of the batter. When the surface has set, flip and cook on the other side for a minute or so. Stack the pancakes with a strip of baking paper or greaseproof paper between each one, so they can be easily separated. Leave them to cool.
Filling: Whip the cream until thick, together with the sugar.
Place a pancake on a serving dish. Spread with cream and jam, then add another pancake. Layer the rest of the pancakes in the same way, finishing with a layer of cream.
Top the cake with fresh fruit and berries. Dust with a little icing sugar (optional.)
