QUICK PICKLED CUCUMBER

This is a quick and brilliant recipe for your own tasty pickled cucmber. It's great to serve alongside with meatballs, burgers or on your sandwich.
QUICK PICKLED CUCUMBER

INGREDIENTS

 

1 fresh cucumber

1 tbsp chopped fresh dill or parsley

1 tsp salt 

3 tsp caster sugar

3 tbsp distilled vinegar (Falu ättika) 12%

a pinch of ground white pepper

HOW TO

 

Cut cucumbers into the thinnest possible slices, a cheese slicer will do the job! Arrange slices in a bowl.

 

Whisk together the white distilled vinegar, sugar, salt and dill or parsley.

 

Pour the mix over the cucumbers and cover the bowl with cling film. Place a plate with a weight over the cucumbers (a tin of tomatoes for example) to squeeze out the liquid.

 

Chill for 1 hour. Pour out the excess liquid.

 

Decorate with chopped dill or parsley. Enjoy as a side dish with salmon dishes or with pickled herring served with fresh boiled potatoes. The quick pickled cucumber is also nice served with veal dishes. It's also super tasty served with meatballs, mashed potatoes and lingonberry jam.
